The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
Making the Cordial: Put all the components inside a saucepan, bring to a gentle boil, agitating until the sugar dissolves. After that, take off the heat and leave to reach room temperature completely. Decant into a clean bottle, seal keeping it chilled, where it will keep for up to four weeks.
For the Cocktail Base: Combine every spirits and syrup into a sizeable container, leave to sit for one hour, then strain best through cheesecloth, so it's completely strained.
When ready to serve: Add 85ml from the cocktail base into your mixing glass containing ice, gently stirring gently for a minute to cool it down. Strain into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish by giving it a quick spritz of the essential oil over the top.
